Tiny Chef Strikes Again

Chef E was at my house on Tuesday and he whipped up these delish chocolate chip mini muffins

Chocolate Chip Muffins (recipe adapted from allrecipes.com)

Ingredients:

2 cups all purpose flour
1/2 cup sugar
1/4 cup brown sugar
1 tablespoon baking powder
1/2 teaspoon salt

1 egg
1 cup milk
1/3 cup vegetable oil
1 teaspoon vanilla
3/4 cup miniature semisweet chocolate chips

In a large bowl combine first 5 ingredients. In a small bowl beat egg, milk, vegetable oil, and vanilla. Stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper lined muffin cups three-fourths full. Bake at 4000 degrees F for 18-20 minutes for mini muffins 14 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing to a wire rack.

These were great when they were first out of the oven. Reheating them might help. They aren't super sweet.
