What Are My Co-Workers Doing

Making my youngest marinate more meat. This time steak strips for Carne Asada. He is working on some English homework. He has reached out to a couple of his favorite teachers to check in of them. I thought that was sweet.

limited ingredient carne asada marinade

1/3 cup extra virgin olive oil
1/4 cup soy sauce
2 Tbsp lime juice
2 Tbsp apple cider vinegar
1 teaspoon ground black pepper
1 teaspoon ground cumin seed
2 Tbsp sugar

My oldest I need to work on some activities of daily living in regards to finances. He pays rent and he was employed during the last month so we need to submit paperwork to social security.

My Truth Today
18 count egg carton fell out of my trunk when I opened it. It was totally my fault. I kinda felt like crying. BUT here is the thing. My son also bought eggs. We have eggs. The store had eggs. It is just eggs. I did manage to save a few. 

I don't know if anyone else follows Jen Hatmaker on Instagram or Facebook. She is speaking my truth. She is a mom to teenagers and college kids. Please watch her videos. It will make you feel better. We all just trying to figure this out.

Oldest needed to grocery shop so he went on our grocery store adventure. He did great. As many know my oldest has Autism. I found a good link on the stimulus check and disable people receiving SSI

My youngest did a bit of journaling. He checked in with his homeroom teacher via email. HE MADE marinade - teriyaki sauce.

Pantry Lessons Learned during the Crisis

My friend and I were talking about our pantries and things we would of done at the beginning of this. Stuff we had no idea would be hoarding or stock piling. I think I did well for my freezer and pantry. I was generally stocked up. My freezer was full. My pantry did have the general baking essentials - flour, sugar, and butter. I posted my freezer inventory. I am on version 3.0 of my inventory.

Yes to some sun today. The people came out of the woodwork to walk in it. There are a lot of dogs getting some exercise.

Homemade Hamburger Helper- I used ground turkey instead of hamburger
canned vegetable
Cowboy Cookies - first time making these. This makes a huge batch good way to use oats. It does take 3 cups of flour. I have had a hard time finding flour. These are really good. I froze some of the dough

Getting Dinner Planning Fatigue? 

I know I am. I saw something via Epicurious "Cooking Through It"- 10 day flexible meal plan. I thought this was interesting and very doable for a lot of people. It also gave me a couple of ideas.

I started some seedlings - Zinna's and Cosmos. I really fell in love with cosmos flowers last summer. I got my cosmos from the high school plant sale. That isn't going to happen this year.

The seeds were old so I was pleasantly surprised that any sprouted. I moved most of them to bigger pots. I also re-potted an African violet

Oldest son is busy writing fan fiction. (Don't ask me about what) He has two computer screens going. He has been doing his laundry as well

My husband is trying to out puzzle me. I started this 1000 piece puzzle two weeks ago and the picture below is how far I have gotten on it. My husband is the puzzle king so having this not completed is driving him crazy.

Vinegar Cake - sounds like a horrible cake but delicious chocolate cake. Developed during the depression when butter, eggs and milk were scarce. I think most people have the pantry ingredients to make this. My recipe is from parade magazine.

Its a brave new world out there for at home learning for my Junior.  English -"The Crucible" and another accuplacer math practice test.

Finally saw the school plan for school work for my Junior in High School.  I had him take an accuplacer practice exam. This is same exam he will be taking to enroll in community college. He was working on the math sections. I have some other ideas as well that I will be implementing in the next couple of days

My oldest spent some time writing some fan fiction and riding his scooter.

Saw cooking meme referred to figuring out what to have for dinner like the show -- Chopped . On Chopped they give you all these weird ingredients and you have to make something edible with all the ingredients. Cooking kinda feels like that.

What are My Co-Workers Doing?

Unfortunately I had to venture out with my oldest for his groceries. It was a ghost town pretty much.

My youngest manned the couch. He convinced me to watch way to Much Tiger King (Netflix) My review below.

Project of the Day

Spent way to much time watching Tiger King on Netflix. I decided everyone is a criminal on the show and I really liked what the one employee said at the end, that not one animal was saved or helped in all of this. This documentary has criminals, drugs, tigers, lions, murderers, polygamy and con men.

Went and did some grocery shopping yesterday. There was a bit of a ghost town feel. Couldn't get any flour. That might put a curb on some baking. There were proteins available not much chicken. There was a bit of beef. I couldn't get hamburger patties. 

What are my co-workers doing?
It really seems like they are doing the big fat nothing. I did have one help me breakdown some cardboard recycle and the youngest completed his English homework

Last night before bed made Overnight Baked Oatmeal. You mix it up and keep in refrigerator and bake in the morning. It is really delicious.

What are my co workers doing?
My youngest worked on laundry. Sunday is his laundry day and HE WORE PANTS. Not sure what the special occasion was.

My oldest was going a bit stir crazy. So I took him to the graveyard to scooter. It was my 2nd walk of the day. It really wasn't warm enough for shorts but he is an adult - live and learn. Oh he also had on sandals his preferred footwear as well.



Project of the Day
I have decided I have too much stuff on my kitchen counters for the amount of baking/cooking I am doing. I also am disinfecting daily or even more frequently these high touch surfaces and I want to do that more quickly and efficiently. I made it halfway.  I still have the island to work on.

I walked over 17,000 steps today. I am tired and sore. I saw a snake. Snakes are really good at social distancing.

As little as possible it appears. One spent all day pantless despite numerous protests from me.

Good news is my Hubby and number 1 back up is headed home from his job assignment.

Sad to hear of Kenny Rogers death. My Mom and Dad are big Kenny Rogers fans so I grew up listening to that kind of music. It is the soundtrack of my early childhood. I love Dolly's and Kenny's friendship.

PROJECTS

So beautiful out I worked on some weeding. Yesterday I had some old seeds so I started those in my little tray greenhouse. If they sprout, it will be fabulous. Something I know about myself is my spring garden self is full of hope and my August garden self has usually petered out.

I heard some seeds are scarce as Toilet Paper. Homesteaders of America is going to be starting a YouTube series on Monday How to Grow food. Is this going to start a modern day Victory Garden movement? Grow A Victory Garden

I heard this yesterday and you know what it is a great day to be alive. Once our fog burned off it was a beautiful day outside. Next week rain so all us Pacific Northwest people were soaking up the sun. Went for a nice long walk

Not my favorite question lately. Going easy with pre packaged orange chicken.

Baking Sesame Bread (Bread Machine)

My son's favorite homemade bread is Braided Semolina Bread from Foodie with a Family - Can made with bread machine, stand mixer or hand. Easy to follow directions. It makes 2 braids

* I don't know about you all but my perishables inventory is getting a little low. I wish I had bought more junk food on Monday at the grocery store.With 2 basically teenagers, all the good snacks ARE gone. For junk food we are down to ritz crackers and tortilla chips. My oldest keeps offering me really gross granola bars from his own stash. I am not that desperate!!

I am now going to refer to my children as co-workers because it is funny.

I wish one would put on pants. He is apparently goal less today.

My more seasoned employee wants to leave the house. He rode with me to the Post Office to pick up some mail from the post office box. We took the long way home.

What Are My People Doing

Oldest is doing his last final. I haven't said what he is studying - Computer Networking. I think the finals are A+ Hardware and Software. Don't quote me on that.

My youngest son worked on his English homework and figured out that his band teacher had put the parade music on canvas. He also put up our circle swing for my oldest. We take it down in the winter.

What's Dinner?
I was so hoping dinner would make itself. My people watch A LOT of food network they sure didn't learn anything from it that actually translates into actual cooking.

Mix and Match Muffin Mix - Good Cheap Eats Jessica Fischer. I added frozen blueberries from my garden and Nonna's. I also added almond extract. I didn't have greek yougurt so used sour cream.I thank my 2019 self for putting this in the freezer

The Art of Noticing


Went for a walk with our dog Tigger. He is missing recess. Our house backs up on a school playground and I swear he knows the recess schedule. He loves to go out and bark at the kids. So even the virus is effecting my dog's social life. (Ha, Ha)

The Daily Roll St Patty's Edition

Writing you hunkered down in the Honeypot Bunker. Aren't Honeypots the definition of social distancing?Necessary but not a place to hang out long term with anyone.

What's For Dinner?
I had already decided last week how we would be eating on St Patty's Day. I pre shopped for this stuff last week thank goodness. It was suggested that we have cabbage rolls aka bierocks. I have a Frankenstein recipe I use so I won't be sharing. I use ground turkey instead of ground hamburger.I decided it would be fun to have pistachio bundt cake. After lunch half of cake was GONE! I won't be attempting so much from scratch cooking. I bit off more than I enjoyed but at least we ate well.

Earlier this year I committed to writing some genealogy stuff in the 52 Ancestors in 52 Weeks Project.. This past weeks prompt is LUCK. I am linking to my writing here. I wrote about my husband's grandfather. LINK HERE. This coming week's writing prompt is Popular.

What Are My People Up To?

I took my oldest to the grocery store. We were getting low on perishables milk, eggs, and butter. It was a quick in and out. It was pretty much a ghost town. They didn't have much meat or canned goods. We shopped local! He is reviewing for his final for tomorrow. The final is online.

My youngest worked on some English homework and helped me complete a few things. He mowed! There was even some evening piano practice.


Art of Noticing Project

The dawn of a new day. I was the first up which is unusual in my house. I often capture the sunrise but the birds silhouetted was just a happy coincidence. Other Art of Noticing Projects can be found on Instagram under #aeartofnoticing.

***FULL DISCLOSURE I don't have it all together. Today had some hard moments. I live with a autistic person whose anxiety really ramps up sometimes.  I miss my husband who is gone for work. I know I signed up for this so I can't complain but I do miss him. Single parenting isn't for sissies and under these extremes is hard.

52 Ancestors Project - Luck

As part of genealogy project I am working on this year. I am participating in 52 ancestors in 52 weeks- Amy Johnson Crow's Blog. Every week is a prompt and last week's prompt was "Luck".  I haven't shared any of these on my blog but with all this free time I am going to start.

One of my favorite photos of my husband's grandfather, Charlie Berg is the one below. We called him Pappy. Pappy is holding a 4 leaf clover. He often looked for them.


Charlie was LUCKY. He was born to Geneva and Carl Berg in 1920 near Aiken, Minnesota. At 5 months old, his mom left. She literally left him in the front of the fire and never returned. It was the middle of winter in Minnesota. His Dad found him in a cold house and ran carrying him all the way to his grandparent's house, Bonsak and Hilda Berg, who lived on the neighboring farm. He spent his early years on their farm. His grandmother raised him.

During WWII , he was in the Army Corp of Engineers. In Charlie's words, "Then they needed a CAT skinner and I got the job. When I climbed on the CAT, a guy told me I was the 7th one, the previous six had died. So I told him, seven was my lucky number! And it was, I made it without a scratch from Normandy to Munich."

Charlie was a survivor in every sense. He survived cancer, heart attack, the death of his wife. Things that have done others in he survived. He lived an amazing 98 years.

My children are unimpressed with my new series.What are my children doing? My oldest son(21) is in college and next week is FINALS. So he is studying for his online finals. My younger son(17) is trying to get over a sinus cold. So he is basically lounging around playing on his computer. I did get him to learn some piano.

Dear Edward by Ann Napolitano
Interesting Book about a plane crash and one lone survivor, Edward. I actually read this on a plane. I don't know if that was great idea.I thought this was an interesting read and I like how the trauma that Edward experienced was explored.

Yale Needs Women by Anne Gardiner Perkins - I started reading this on International Women's Day which seems appropriate. This book explores how Yale became an co educational institution. Told mainly through the eyes of the women who were the first women in the co educational class. One of the take-away I got from this book was how political this idea was. Yale was known way before Ivy institutions for admitting Jews and Blacks but even after admitting women it was a struggle to admit them in significant numbers. It was also very isolating being one of the first women admitted. I love that this story was told. It makes me appreciate those first ladies contributions. This is well written and researched.

When, I turned on the radio they were playing, "Too Much Time On Your Hands". It seemed appropriate as it was announced yesterday that school would be closed from March 17 - April 24.They also played Riders in the Storm which was funny as well as we are having record winds and then they played Crazy Train.  What is the radio trying to tell me? (Ha Ha)

Yesterday to make myself feel better I took inventory of our garage freezer and house freezer. I can confidently say we won't starve.

Jessica at Good Cheap Eats has an inventory sheet for your pantry and freezer in her post on Meal Planning 101  My list isn't fancy but it will do the trick.

My older son and I had to pick up a prescription in a neighboring town. We saw an interesting car.See pic below. Not the best picture but car covered in round reflectors and had a vase on the top. ART or Crazy?

It is Pi Day today. I have frozen peaches. I enjoy baking but I don't do pies. Tried Easy Crumb Top Peach Pie from Wildflour's Cottage Kitchen. Baking pie stresses me out. I am calling it my ugly pie. It tasted good.


You know what is bumming me out the most is that the library is going to be shutdown. We will still be able to access e-books and movies. I know first world problems.
